Fourth of July Gerson Recipes


The Fourth of July is just around the corner and for Gerson patients, this means skipping the BBQ. But that doesn’t mean missing out on some timeless summertime goodies! Make your own fireworks with these tasty Gerson recipes straight from the Gerson Therapy Cookbook – A healthy twist on classic American favorites that are perfect for sharing AND good for you, too!

Cabbage Slaw (3-4 servings) 


  • 1/4 small red cabbage, shredded
  • 1/4 small green cabbage, shredded
  • 1/4 celery root, peeled & cut into thin matchstick pieces
  • 3 radishes, thinly sliced
  • 1/2 red onion, thinly sliced (optional)
  • 1/4 Yogurt Dill dressing



  1. In a small mixing bowl, combine red and green cabbage, celery root, radishes and onion.
  2. Toss with Yogurt Dill dressing.

Lentil Sloppy Joe’s (2 servings) 


  • 1 small yellow onion, diced
  • 3-4 cloves garlic, minced
  • 1/2 green bell pepper, diced
  • 1 rib celery, diced
  • 1 cup cooked Lentils
  • 1 tablespoon chopped parsley
  • 1 teaspoon thyme
  • 3 cups Simple Gerson Tomato Sauce or Gerson Ketchup
  • 1 teaspoon maple syrup
  • 1 teaspoon Sucanat (or other permitted sweetener)
  • 2 slices Rye Bread


  1. Place the diced onion on the bottom of a small pot, followed by the garlic, bell pepper and celery. Cook on medium heat until the pot begins to steam.
  2. Add lentils, parsley, thyme and mix together. Then add the Simple Gerson Tomato Sauce, cover, reduce heat and continue to cook for at least 10 minutes.
  3. Add the maple syrup and Sucanat, mix well and continue to cook for 3-5 minutes longer. Turn off heat and let sit for another few minutes while the flavors meld.
  4. Serve as is, or on two slices of Rye Bread.

Fruit Salad (2 servings) 


  • 1 cup cubed watermelon
  • 1 cup green grapes
  • 1 cup red grapes
  • 1 lime, juiced
  • 4-5 mint leaves, thinly sliced


  1. Mix all fruit together in a medium-sized serving bowl.
  2. Pour lime juice over the fruit.
  3. Add mint and gently mix.
