Red onion
Heirloom tomatoes
Watermelon
Mint leaves
1 teaspoon permitted sweetener (such as honey or maple syrup)
1/2 cup red wine vinegar
2 tablespoons flaxseed oil
DIRECTIONS
- Cut the produce into bite-sized cubes
- Combine the wet ingredients with red onion and let it marinate in the refrigerator for about an hour.
- Pour the red onion mixture over the cubed ingredients and mix well.
- Top with chopped mint leaves just before serving.
